A cook must have several corn side dishes in her recipe box because corn goes with just about everything, right?
Especially with beef ribs!
And it’s probably the one vegetable that most kids will eat.
EASY Corn Side Dishes
Ingredients
2 lbs of corn, frozen
2 T of butter
1 can of green chilis
1 t of sea salt
1 t of cumin
1t of black pepper
3 oz of cream cheese, cubed
1 c of shredded colby blend cheese (or use whatever you have on hand)
Instructions
Spray slow cooker with cooking spray or use slow cooker liners
Place all ingredients in slow cooker except for cream cheese and shredded cheese
Cook on high for 2 hours or low for 4 hours
Add cream cheese and shredded cheese to slow cooker
Mix well
Cook for 30 more minutes or until cheese is blended
Notes
Use jalapeno peppers instead of green chilis to add more of a kick.
