I love fajitas. Sizzling meat and peppers mmm. You can’t go wrong with simple delicious ingredients.
Not only is it delicious but is so easy to make. You just gather all your ingredients in the slow cooker, turn it on and just smell the goodness wafting through out your home while this cooks for eight hours.
We were giving four Crock-Pots as wedding presents but they sat unused for many years. I have to admit it wasn’t until a couple years ago that my slow cooker and I became friends. After we had our son I needed to be able to get dinner on the table without actually having to be in the kitchen so I started to search out slow cooker recipes. I was amazed by all the things you can make in a slow cooker.
I try to use my slow cooker as much as possible now. I really thought before that you could only make soup in them. Now I experiment with all sorts of ingredients!
Two pounds of thinly sliced stir fry beef ( boneless sirloin strip, flank steak, skirt steak)
3 bell peppers, red, green and yellow
1 white onion
*If you can find the Bird’s Eye frozen package Tri Color Peppers and onion blend this can be used instead of fresh ingredients.
2 tablespoons of Fajita seasoning ( I used Badia Brand it is certified Gluten Free)
1/2 cup water
Tortilla shells- Flour tortilla shells. For gluten free you can use yellow or white corn or teff flour.
Toppings: You can make this as as simple as you want, I love avocado, salsa, sour cream, lettuce and of course cheese!
- Slice your meat if it is not precut, add it to the crock.
- Chop onions and bell peppers and stir together with your meat.
- Add your fajita seasoning into the half cup of water and mix. Pour on top of your meat and onions.
- Cook on high heat for 6 hours or on low heat for 8 hours. Stir ingredients prior to serving.
If there is excess water just drain your slow cooker or use a slotted spoon to scoop up your ingredients. I recommend heating up your tortillas on a hot skillet for 15 to 20 seconds. Add ingredients to your tortillas and top with all your favorites!
