Putting bacon with a cheesy potato recipe is absolutely genius in my opinion.
Unfortunately, my large family gobbled this up, and once again, NO LEFTOVERS!
However, it’s so easy, that I don’t mind throwing it in the slow cooker anytime.
Slow Cooker Cheesy Potato Recipe with Bacon
This is so wonderful. I am sure it would be tasty served cold, too. We served it with steak and green beans.
Ingredients
12 slices of bacon, cooked and crumbled
12 medium potatoes, peeled and cubed
1 c of Asiago or Parmesan Cheese
Salt and pepper to taste
16 oz of heavy cream
Instructions
Spray Slow Cooker with cooking sray or use slow cooker liners
Layer 1/2 potatoes, bacon, cheese, and salt and pepper
Repeat layer process one more time
Pour cream over potatoes
Cook on high for 4-6 hours or 7-9 hours on low or until potatoes are cooked
Stir

I’m allergic to cow’s milk so I made a couple of replacements:
1. Half goat’s milk & half goat’s milk yogurt instead of heavy cream.
2. Half-n-half mixture of Old Drunken Goat cheese and Sheep’s Manchego cheese.
It was DEEEElicious! Thank you for such a simple recipe. It will be great for something to take to a pot-luck!
