With a big family and busy schedule, I find the only way to ensure that I can always have a nutritious dinner on the table is to combine freezer meals and my crock pot. I get together with my neighbour about once every three months and over two or three days, she and I make enough freezer meals for each of us to have suppers for two and a half months. It’s an exhausting few days, but it is so worth it to have my freezers stocked with meals ready to go. Most of the meals can go straight from the freezer to the crock pot, so I only have to worry about turning on the slow cooker and can get on with the rest of my day. It’s been such a sanity saver!
2 pounds boneless chicken breasts or thighs (can be left whole or diced)
1 cup orange juice
1/3 cup chili sauce
2 Tbsp. soy sauce (I use gluten free)
1 Tbsp. molasses
1 tsp. dry mustard powder
1 tsp. minced garlic
1/2 cup green, yellow and red peppers, chopped or sliced
10 ounce can of mandarin orange slices
If making as a freezer meal, place chicken in resealable freezer bag. Mix all other ingredients except mandarin orange slices together and pour over chicken. Seal bag. Freeze. On cooking day, thaw, add to slow cooker and cook on low for 4 hours, adding the can of oranges in the last half hour.
One of our sons is on a gluten free diet so many of my freezer meal to crock pot recipes are gluten free. This one can be gluten free provided that you use a gluten free soy sauce.
