Slow Cooker Red Beans and Rice is super EASY and economical for families!
Slow Cooker Red Beans and Rice
I usually use whatever leftover meat I have in the freezer.
Ingredients
1 lb of dry red kidney beans, soaked overnight
4- 5 c of Water
4-5 Beef Boullions cubes
1 medium onion, diced
4 cloves of garlic, minced
2 T Creole Seasoning
salt and pepper to taste
3 cups of cooked rice, (I use brown)
meat, optional (I have used sausage, ground turkey or beef, and diced ham)
Instructions
Soak kidney beans overnight
Rinse Beans
Place beans in slow cooker with remaining ingredients except rice
Cook on low for 6-8 hours or high for 4 hours
Serve over cooked rice or mix the rice in the slow cooker and cooker for another hour.

This looks yummy! For the option of adding the rice to the slow cooker and cooking 1 more hour, is that raw rice or cooked rice that you add? Thanks! 🙂

You can put cooked rice in the slow cooker or if there is enough liquid, you can add minute rice and it cooks nicely.
I don’t have any dry beans, but I do have some cans. How would I alter cooking time (or do I?) when using canned kidney beans?

I would decrease the water and not cook the beans as long. HTH
