Spicy chicken taco meat made in the slow cooker is officially one of my new favorite ways to serve tacos for my gang.

However, last night time I made this tasty spicy chicken taco meat, I got a bit carried away with the chipotle peppers and my little ones mouth were on fire.

Whoops, it was an epic fail for them, but not for my older kids and me. We thought we died and gone to heaven, actually, maybe I should say hell because they were smokin’ spicy.

Slow Cooker Spicy Chicken Taco Meat

Prep Time: 5 minutes

Cook Time: 8 hours

Yield: 6-8 servings

Slow Cooker Spicy Chicken Taco Meat

Ingredients

4-5 chicken breast, frozen
1/2 onion, diced
1 green bell pepper, diced
4 garlic gloves, minced
1 28 oz of whole tomatoes, crushed with fork
2-4 chipole peppers in adobe sauce, chopped
salt to taste

Instructions

Place chicken breast in slow cooker
Pour the rest of the ingredients on top of chicken
Cook on low for 8 hours
Shred Chicken
Serve with taco shells or flour tortillas

Notes

Eliminate the chipotle peppers to just one if you have kids. If you prefer it spicy, add the entire can of chipotle peppers in adobe sauce.

I usually have a taco bar set up with all the fixin’s.  Just beware if you are serving this to the kids, you will want to be sensitive to how many chipotle peppers you add to the slow cooker.
