Stuffed Acorn Squash Recipe
Our family loves squash and acorn squash are my favorite when stuffed. This Stuffed Acorn Squash Recipe is super easy to cook in your slow cooker and a great side dish that will compliment any meal.

Stuffed Acorn Squash Recipe
Ingredients

3 small acorn squash
5 tablespoons of instant brown rice
3 TBS of onions
3 TBS of celery
3 TBS of cranberries
9 dried apricots
1 teaspoon of butter
9 tablespoons of orange juice
Lemon rind for topping
Instructions
Cut off the tops of the squash
Here is a tip for cutting squash
Then scoop out the seeds and throw them away.
Then you will need to combine rice, celery, cranberries, onions, and apricots.
Next, stuff each acorn squash with the mixture and put 3 TBS of orange juice over each stuffed squash.

Then I put a pat of butter on top of each Acorn Squash.
I placed them in my slow cooker for 4 hours on low or until they were soft. If your squash is small it will take 2.5 hours.

I love winter squashes and this sounds like a great recipe to try. I would probably replace the rice with cauliflower.
